Only after an accurate selection of the vineyards and a proper ripening of the grapes up on the vine, the grapes that originate Anima are picked. It has a luminous straw yellow colour, a persistent, fruity and intense fragrance, a vigorous, equilibrated, harmonious flavours reminding the ripe fruit.

Vinification: soaking of the skins into the must at 10° C temperature for about 24 ours - racking - fermentation controlled in steel tanks.
