Grapes: 60% Chardonnay, 30% Pinot Noir, 10% Pinot Meunier.
Terroirs: Vineyards: "l'Enclume", "la Savoyarde", "les Marguiniers" (limestone and sand).
Vinification: First fermentation in thermostatically controlled stainless steel vats and oak barrels. No malolactic fermentation.
Bottling: May 1998.
Disgorging: Manual.
Dosage: 6 g/L - Brut.
Eye: straw yellow, fine lively mousse.
Nose: elegant with aromatic finesse, mineral hints with suggestions of white flowers.
Mouth: delicate palate - almonds and hazelnuts at first, opening out to pineapple and grapefruit.
Serving: a refined Champagne for sophisticated luncheons, or grilled shellfish and fish, papillotes or fruit sabayon.
