Vine: Pinot grapes typically come in small, cylindrical, juicy bunches. The berries are grey (Pinot Gris) or black (Pinot Noir). The marc resulting from this variety is carefully fermented and kept separate from the new juice. The resulting grappa, from a still that uses a discontinuous steam process, is a high-quality product and makes an excellent distillate.
