This Passito wine, obtained from different varieties of carefully selected and withered white grapes, presents a straw-yellow color with amber tints and a sweet and very round taste. Excellent wine for the end of a meal, it goes very well with dry pastry.

Grape variety: Garganega 80%, Fernanda 10%, Malvasia 10%.

Harvest and withering: the different grape varieties are harvested according to their degree of maturation (by the second decade of October) and, after a strict selection process, placed in small wooden boxes in order to favor the prolonged withering process of 120-140 days.

Vinification technique: during the month of March, part of the grapes (80 %) have their stalks removed and are pressed after a maceration period of approximately 48-50 hours at a controlled temperature that ranges from 6 to 8° C. They undergo a delicate pressing which allows to obtain an excellent quality must. Fermentation takes place at a temperature of 12-13° C and on the second day the remaining grapes (20 %), which are still intact, are added to the must. The right balance between alcohol and sugar determines the end of the fermentation of the Passito Monte de Luca, which remains in steel containers for approximately one year, favoring an arduous process of refinement in the presence of “fine dregs,” which contribute to enrich the complex bouquet of the wine.

Refinement: after remaining 4-5 months in bottle, this nectar can start delighting palates.

Colour: straw-yellow colour with amber tints.

Bouquet: persistent fruit notes (peach, banana) in evolution, discernable scents of candied fruit and honey.

Tasting notes: sweet, velvety, delicate but not excessive.

Food pairings: served fresh, as a meditation wine and with dry pastries.

Alcohol: 13,6–13,8 % Vol.

Bottle: 500 ml.
