Grape varieties: 100% Chardonnay
Vineyard: Molino delle Balze.
Maturation: 50% in barrique for 7 months.
Ageing in glass: 6 months.
Alcoholic content: 13% vol.
Vinification: is done partly without the skins and partly by cold maceration. Cooling of the must occurs by settling and natural decantation in stainless steel vats. Alcoholic and malolactic fermentation occurs 50% in steel and 50% in barrique. The subsequent lees contact lasts 6-8 months, according to the vintage. The wine is blended in stainless steel tanks. Very wide filtration is applied at the bottling stage, which is followed by ageing in glass for at least 6 months.
